Sneaky Veggie Smoothies
I think my daughter might have a super power, since she can sense vegetables in a meal no matter how cleverly concealed.
As the mother of a toddler, meal-time can be exasperating. Luckily, my food processor has brought some peace of mind with some awesome smoothie recipes that sneak in veggies to what my daughter calls “ice cream.”
- The foundation for your smoothie is 1 cup of milk, ¼ cup yogurt and one peeled banana, all combined in a blender or food processor.
- Add in 1/3 cup of frozen or fresh fruit (berries, pineapple and peaches are popular choices in my house.)
- Next comes the healthy sneak-attack. Blend in 1/3 cup of frozen peas, carrots, spinach, fresh kale, or whatever strikes your fancy.
It may take a few tries to find the right balance for your toddler’s taste buds. Try adding one teaspoon of honey if you need something sweeter.
Adding more milk makes the smoothie thinner and you will need a straw to drink it. My daughter prefers more fruit and veggies and a little ice to make a thicker consistency she eats with a spoon. Whatever gets those veggies in her belly is a success to me. Happy Blending!
